Golden Energy Balls

5-min turmeric cashew coconut balls are packed with nutrients



Ingredients

  • 7 dates

  • 1/2 cup raw or dry roasted unsalted cashews

  • 1  Tbs fresh lemon juice plus lemon zest from 1 lemon

  • 3/4 cup unsweetened shredded coconut plus more for rolling balls on

  • 2 tsps turmeric

  • Black pepper

  • Sea salt



Instructions

  • Place all ingredients in a food processor and blend well until a ball starts forming

  • Take about a one tablespoon measure and roll each into a ball

  • Roll each on a plate sprinkled with the extra coconut

  • Refrigerate to firm up
