Beet Hummus

Quick, delicious + nutritious



Ingredients

  • 1 large red beet, steamed or roasted

  • 1 1/2 cups cooked chickpeas or one can, save 2 Tbs aquafaba (liquid from the chickpeas)

  • Juice of 2 limes

  • 2 cloves of garlic (you can add more if you like it to be garlicky!)

  • 2 Tbs olive oil

  • 1/4 cup tahini

  • Salt to taste

  • Pinch of cumin

  • 4 Tbs ice cold water



Instructions

  • Process all the ingredients except for the water. Once processed add the water while the machine is running. (this gives it a light a fluffy texture)



Notes

  • Makes about 3-4 cups

  • Serve with bread or with snacking veg
