Simple, nourishing + richly satisfying
Ingredients
6-8 cups of kale, washed, stems removed and finely chopped
1 1/2 cups white beans (1 can) - any will do, I like to use butter beans
1 avocado cut into cubes
3 Tbs hemp seeds
3 tbs pumpkin seeds
salt + pepper, taste
Dressing:
3 Tbs lemon juice
1 Tbs Dijon mustard
1 Tbs maple syrup
Instructions
Blend all the dressing ingredients
Add the kale to a large serving bowl, pour the dressing over it and massage the kale with your hands for a minute or two to soften it and give it a nice texture.
Add the beans, avocado and seeds and mix to combine and season with salt and pepper to taste.
