Kale + White Bean Salad (Erewhon-Style)

Simple, nourishing + richly satisfying



Ingredients

  • 6-8 cups of kale, washed, stems removed and finely chopped

  • 1 1/2 cups white beans (1 can) - any will do, I like to use butter beans

  • 1 avocado cut into cubes

  • 3 Tbs hemp seeds

  • 3 tbs pumpkin seeds

  • salt + pepper, taste

    Dressing:

  • 3 Tbs lemon juice

  • 1 Tbs Dijon mustard

  • 1 Tbs maple syrup



Instructions

  • Blend all the dressing ingredients

  • Add the kale to a large serving bowl, pour the dressing over it and massage the kale with your hands for a minute or two to soften it and give it a nice texture.

  • Add the beans, avocado and seeds and mix to combine and season with salt and pepper to taste.

    Notes

  • Serves 4 as a side or 2 as a main

  • Can be refrigerated for 2 days
