Pickled Beets + Red Onions

Ingredients

  • Large red beets or baby colored beets - quantity and colors are your choice

  • 1 large red onion, thinly sliced

  • 1 cup vinegar

  • 1 cup water

  • 1 Tbs maple syrup

  • 1 tsps salt

  • Quantities depend on the amount of beets you use



Instructions

  • Steam beets in Instant Pot (or roast them)

  • Slice the red onion thin with a mandoline

  • Layer sliced beets and onions in jars

  • Mix vinegar, water, maple syrup and salt and microwave for 30 seconds

  • Add to jars and leave on counter top, turning every so often

  • Refrigerate and enjoy!



Notes

  • To avoid red hands, use plastic gloves (or baggies) when peeling the beets
